A Week of Breakfast!

So, what’s for breakfast? I don’t know about you, but for me I need to eat in the morning, and I get very unsettled if I do not. It wasn’t always that way for me, when I was younger, I could skip breakfast, just have some coffee and be good until lunch. This is not the case now. Besides, that is not the healthiest option!

So thinking about breakfast, I will share some of my favorites.

Morning green shake: handful (generous) of spinach (and whatever leafy greens I have), frozen mango, 1/2 banana, 1/4 tsp turmeric, 1 tsp alma berry, 2 T ground flax, 1/4 cup oatmeal. Add a couple of ice cubes, and a can of coconut water. Blend. I drink this slowly in the morning. It is thick (depending on the amount of fluids I add), but fresh tasting . There are no weird tastes, just clean and green.

Tofu scramble: firm tofu. Take out of the package, squeeze the water off, then just crumble in a bowl. I then add spices: turmeric, onion and garlic powder, smoked paprika, poultry seasoning. I sprinkle it on to look and taste - I like my scramble to have a yellow tinge - but I don’t want to get carried away with too much turmeric - so just sprinkle and adjust as you like. I toss this in a frying pan and brown it a bit. Done. Ready for you. For added bonus if your feeling super creative - add chopped veggies like broccoli or asparagus - I would salute them in broth to soften a little before adding the tofu. Then grad a handful of spinach and tossed in - the leaves will wilt a little and it will be perfect.

Oatmeal - Just 1/c cup of oats, through in raisins, pecans, sprinkle with date sugar and cinnamon - add 1 cup of water and zap it in the microwave for a couple of minutes. Once its thick, add a little plant milk if you wish.
